
Most people assume fresh apple juice requires an expensive juicer. It does not. A standard blender and a fine mesh strainer gets you there. The process takes about ten minutes and produces a juice that tastes nothing like the pasteurized version in a bottle.
Prep: Wash thoroughly, remove the core and seeds, and cut into rough chunks. Leave the skin on — it contains significant nutrients.
Blend: Add the apple chunks and cold water to your blender. Blend on high for 60 to 90 seconds until completely smooth.
Strain: Pour through a fine mesh strainer or cheesecloth set over a large bowl. Press to extract all the juice. Add lemon juice, stir and serve over ice.
