
Cucumber juice has a reputation for being bland. That reputation is deserved when made with cucumber alone. But add fresh mint and a squeeze of lime and it becomes something genuinely craveable. This is the drink I reach for after a workout.
Wash cucumbers and cut into chunks. No need to peel English cucumbers — the skin adds nutrients and color. Run through a juicer or blend with 1/4 cup water and strain. Add mint, lime juice and salt. Stir and serve immediately over ice.
