
Peach season is short. When it arrives, I make this blend almost every day. Ripe peaches at peak season need almost nothing — a squeeze of lemon to brighten them, fresh ginger to add warmth and contrast, and a bit of cold water to carry it all. That is the entire recipe.
Add the peaches, ginger, lemon juice and water to a blender. Blend on high for 45 seconds until smooth. Taste — if the peaches are fully ripe, you likely need no sweetener. Strain for a cleaner texture or leave unstrained for a thicker consistency. Serve over ice with a wedge of lemon.
